Dragon by Apogee’s Bread knife boasts a simple design and high functionality. It is extremely useful for cutting bread, cakes, pastries, and large fruits with tough skin. Dragon series bread knives are constructed of 3mm thick Nitrogen-Enriched American BD1N Steel, hardened to a Rockwell Hardness of 63. Their long blade allows the cook to cut large surfaces in long, smooth strokes just like a saw in carpentry. The serrated edge of the knife can neatly cut through soft bread without crushing it. The Dragon bread knife’s serrations are sharp yet rounded which makes it useful for slicing and carving meats. For the handle, it uses FDA-approved black resin and linen Canvas Micarta handle with three stainless steel rivets. They feature a fully cast double bolster with durable Spanish Linen Micarta scales that provides a comfortable and secure grip. The bread is one-piece construction with high edge retention capacity.
