This knife is well designed for slicing, dicing, and chopping fruits, vegetables, and proteins. It features a 3mm thick satin finish Nitrogen-Enriched American BD1N Steel, hardened to a Rockwell Hardness of 63. The blade has a slight belly curve that allows efficient functioning. The Dragon by Apogee Santoku knife is famed for its excellent edge and sharpness retention. The Santoku knife is a one-piece construction that gives it added strength and durability. It is paired with an FDA-approved black resin and linen canvas micarta handle. The handle has three rivets to securely fix it with a blade and add an extra dimension to the overall design. The end-cap of the handle is made of 18/10 stainless steel, which provides outstanding stability and balance.
