Each knife in the Itamae series is a part of the Murray Carter Collection, a renowned bladesmith with over 25 years of experience in crafting high-performance cutlery. The knives are designed with the signature "Carter Elbow," a distinctive taper from the spine to the point that reinforces the blade's tip, making it more durable and robust.

 

One of the standout features of the Itamae series is the choice of blade material. The knives feature SUS410 stainless steel blades with an Aogami Super Blue core. Aogami Super Blue is a high-carbon steel known for its exceptional edge retention, hardness, and ability to take an incredibly sharp edge. The SUS410 stainless steel outer layer provides excellent corrosion resistance, ensuring the blade's longevity.

 

The handle of the Itamae knives is made from Burl G10, a high-pressure fiberglass laminate that is highly durable and resistant to moisture and temperature changes. The octagonal handle design is not only visually appealing but also provides a comfortable and secure grip. Black G10 ferrules add an elegant touch and enhance the overall aesthetics of the knives.
