General Knife Sharpening Instructions

Unlike standard home kitchens, a commercial kitchen uses various types of knives, perfected for serving purposes. These precision tools must be maintained with great care. You can sharpen your knives using various tools. A sharpening stone is the most common utility for this purpose. These are available in coarse, medium and fine textures. Maintaining and Sharpening Knives: Systematic Instructions

Sharpening using stones:

Sharpening stones are perfect for daily sharpening purposes. These stones are available in the market in varying grain sizes.

  • The first step you should follow while sharpening the stone is to prepare it by soaking in water. Bevel the corners of the stone by using stone fixers and flatten the top to prepare it for sharpening. Remember to stabilize the stones using a damp cloth or base. Wetting the stone is crucial for sharpening.

  • Determine the side and angle for sharpening and place the knife on the stone. Retain a firm grip on the handle with one hand while maintaining a 60○ to 70○ angle.

  • With two to three fingers of your other hand, press the edge that needs sharpening towards the stone. Move the knife to-and-fro, exerting pressure while moving forward and releasing into the reverse motion.

  • Once you have sharpened one side, reverse the blade and repeat. Never sharpen the knife flat over the stone.

 

Using Sharpening Steels for Sharpening Knives:

Sharpening Steels don’t actually sharpen the edges of a knife. Their function include straightening and re-aligning the burrs, creating fine edges.

  • While using a sharpening steel, hold your knife at a 20○ angle to the steel.

  • Run it from the tip of the rod to the bottom in one smooth motion.

  • Although you can hold the knife pointing away from you or towards you, the safest way of handling is to hold the steel point downward, running your knife down to sharpen.

 

Tips for Caring for Your Knives

  • Sharpen your knives regularly. Even if your knife is already sharp, we advise that you sharpen it at minimum once every two to three days.

  • Placing your knife in an inappropriate position will cause your knife to lose its sharp edges.

  • Keeping your knives in a knife guard and storing in a drawer can protect the edges from dulling. This will ensure a longer viability.
